About a month ago I really started to clean up my diet and really start eating well. By well I mean no sugar or any processed food. So basically is it a lot of fruits, vegetables and lean protein. I have known for a long time that this is how I should be eating but to have the discipline to do it is the key. Anyways, I tried this recipe tonight that my sister gave me this week and it is fabulous. I changed it up a bit and used Quinoa instead of brown rice b/c I already had that cooked but either would be considered, "Clean."
Chicken Rice Cakes2 Tbsp. EVOO, divided2 cups chicken, cooked and finely shredded 1 cup sweet potato, cooked and mashed1 cup brown rice or Quinoa, cooked1 egg1/2 cup mozzarella cheese, shredded1 1/2 tsp rosemary, chopped (I omitted this)sea salt and pepper to taste1 cup mushrooms, diced1. Heat 1 Tbsp EVOO in skillet over med-high heat2. in a bowl mix all ingredients together and shape into 8 patties3. cook until golden brown on both sides4. serve with a steamed veggie of your choiceEnjoy!
